When adding flour and water to your starter, it is called “feeding.” You want to feed your starter the same flour it has always been fed, whether you started it or you bought it.
You do this by feeding your starter with as much flour as there is starter. I like to eyeball it. Then add water until it becomes a muffin-like texture.
